These crispy chickpeas make a delicious salad topper in place of conventional croutons! They can also make a tasty fiber and protein-rich snack with 9 grams of fiber and 10 grams of protein in only a quarter-cup serving. To give you perspective on the amount of fiber contained in chickpeas, a total daily recommended serving size is only approximately 30 grams. Therefore, this small dietary addition gets you a whopping one third of the way there! Health benefits of adequate fiber intake can include improved bowel regularity, reduced risk of colon cancer, weight loss and improved hormone balance and detoxification (to name only a few!).

These crispy chickpeas make a delicious, fiber and protein-rich salad topper in place of conventional croutons!

Ingredients

  • 1 small can chickpeas (398ml)
  • 1 tsp olive oil
  • 1 tsp nutritional yeast
  • ¼ tsp garlic powder
  • ⅛ tsp Herbamare or sea salt
  • ⅛ tsp black pepper

Instructions

  1. Preheat your oven to 375℉ and line a baking dish or cookie sheet with parchment paper.
  2. Drain and rinse your chickpeas prior to gently drying them with a paper towel.  If any of the chickpea skins fall off in the process, simply discard them.
  3. Combine the chickpeas, olive oil and all spices in a mixing bowl.  Stir to combine.
  4. Spread your chickpeas onto the parchment-lined baking dish and bake for 40 minutes, mixing once halfway through.
  5. Store in a covered container for 4-5 days and enjoy as a snack or salad topper!
