Kale Caesar Salad
This isn’t your classic cheese and crouton-filled Caesar salad! Instead, this healthier Caesar salad has roasted chickpeas as croutons, pecans and nutritional yeast in place of cheese, and nutrient-dense kale in addition to romaine lettuce!
This kale can be dressed in advance, but to keep its freshness it’s best to keep the romaine lettuce, Pecan Parmesan and Roasted Chickpea Croutons separate from the dressing until serving. If you’d like to add additional protein, this Kale Caesar Salad is delicious topped with grilled chicken, steak, salmon, or prawns!

Kale Caesar Salad
This isn’t your classic cheese and crouton-filled Caesar salad! Instead, this healthier Caesar salad has roasted chickpeas as croutons, pecans and nutritional yeast in place of cheese, and nutrient-dense kale in addition to romaine lettuce!
Ingredients
- 2 bunches of black (lacinato) kale
- 1 small head of romaine lettuce, washed and chopped.
- 1 batch of Roasted Chickpeas Croutons
- 1 batch of Pecan Parmesan
- 1 batch Creamy Caesar Dressing
- ¼ cup dried cranberries
Instructions
- Wash, dry and remove the stems from the kale before finely chopping it and adding it to a large salad bowl.
- “Massage” the kale by squeezing and kneading it for 30 seconds with your hands to break down the fiber.
- Add the Creamy Caesar Dressing to your kale and stir well to combine.
- If serving immediately you can also add the romaine lettuce and all other ingredients. If not, wait until you are ready to serve to add these items so the lettuce, pecans and roasted chickpeas remain crisp. Enjoy!
