This simple salad makes for a satisfying lunch or a quick and easy dinner that will fuel your body for health!

Ingredients

  • 4 Oven-Baked Falafel
  • 4 cups spring mix or mixed greens
  • ½ cup red cabbage, chopped
  • ¾ cup cucumber, chopped
  • 1 cup carrot, grated or shredded
  • ½ cup avocado (approximately half of a large avocado)
  • ⅓ cup Real Food Ranch Dressing
  • ¼ cup hemp seeds

Instructions

  1. Divide your mixed greens, red cabbage, cucumber, carrot and avocado onto 2 separate plates.
  2. Optionally you may heat the falafel patties in a toaster oven prior to serving.  Top each salad with 2 falafel patties, 2 tbsp of hemp seeds and approximately 2 ½ tbsp of ranch dressing.  Note that if you are packing a meal that won’t be eaten right away, keep the dressing separate from the greens until serving.  Enjoy!
